Autumn Grain Bowl

A warm, hearty grain bowl filled with roasted vegetables, vibrant greens, and a hint of sweetness, celebrating the flavors of autumn.

Ingredients

  • 1 cup farro
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 cups kale, chopped
  • 1/2 cup dried cranberries
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 1/4 cup pumpkin seeds (optional)

Instructions

  1. Prepare the farro: Bring 2 cups of water to a boil. Add a pinch of salt and the farro, then reduce heat and simmer for 25–30 minutes until tender.
  2. Preheat the oven to 400°F (200°C).
  3. Roast the squash: Toss the butternut squash cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, turning halfway through.
  4. Sauté the kale: In the last 10 minutes of roasting, heat olive oil in a skillet over medium heat, add kale, and sauté for 5–7 minutes until wilted.
  5. Combine the farro, roasted squash, and sautéed kale in a large bowl, tossing gently.
  6. Add the dried cranberries and drizzle with more olive oil if desired.
  7. Top with pumpkin seeds if using, and serve warm.
