Bakery Style Mixed Berry Muffins with Frozen Berries

Deliciously fluffy muffins packed with frozen mixed berries, perfect for breakfast or snacks year-round.

  • ½ cup unsalted butter (melted and cooled)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup buttermilk or regular milk
  • 2 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cups frozen mixed berries
  • Sparkling sugar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a 12-cup muffin pan with non-stick spray or liners.
  3. Melt the butter in a medium bowl and let it cool.
  4. Combine melted butter and sugar in a large bowl until creamy.
  5. Add vanilla extract and mix, then add eggs one at a time, mixing well.
  6. Incorporate the buttermilk and mix until just combined.
  7. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  8. Mix dry ingredients into the wet ingredients until just combined.
  9. Fold in the frozen mixed berries gently.
  10. Fill the muffin cups about three-quarters full with batter.
  11. Sprinkle optional sparkling sugar on top if desired.
  12. Bake for 18-20 minutes until a toothpick comes out clean.
  13. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Serve warm for the best flavor, optionally dust with powdered sugar or spread with butter.
