Hearty Beef Stew

A cozy beef stew simmered with tender meat and flavorful vegetables, perfect for chilly days.

Ingredients

  • Beef Chuck (2 lbs)
  • Carrots (3 medium)
  • Potatoes (4 medium)
  • Celery (2 stalks)
  • Broth (6 cups)
  • Bay Leaves
  • Thyme
  • Salt
  • Pepper

Instructions

  1. Prep Your Ingredients by chopping your vegetables into bite-sized pieces and cutting your beef into 1-inch cubes.
  2. Sear the Beef by heating oil in a large pot over medium-high heat and browning the beef cubes for 4-5 minutes.
  3. Sauté the Veggies in the same pot starting with onions and celery for about 3 minutes, then adding carrots for an additional 3 minutes.
  4. Bring it All Together by returning beef to the pot and stirring in flour, broth, bay leaves, thyme, salt, and pepper.
  5. Cook Low and Slow for about 2 hours while stirring occasionally.
  6. Add the Potatoes after 1.5 hours and cook for an additional 30 minutes.
  7. Final Taste Test about 10 minutes before serving to adjust seasoning as needed.
  8. Serve and Enjoy by ladling into bowls and pairing with crusty bread.

Notes

For extra flavor, add a splash of Worcestershire sauce or balsamic vinegar before serving.
