Beef Stroganoff

A comforting classic dish made with tender beef strips, earthy mushrooms, and a creamy sauce over egg noodles.

  • 1 pound beef strips (sirloin or tenderloin)
  • 8 ounces cremini or button mushrooms, sliced
  • 1 cup sour cream
  • 12 ounces egg noodles
  • 2 tablespoons olive oil
  • 1 onion, finely chopped (optional)
  • 2 tablespoons flour
  • 2 cups beef broth
  • Fresh parsley, for garnish

Instructions

  1. Sear the beef: Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add thinly sliced beef strips in a single layer and let sear for about 3-4 minutes without stirring.
  2. Remove the beef and transfer to a plate, allowing it to rest.
  3. Sauté the mushrooms: In the same skillet, add another tablespoon of oil if needed and add sliced mushrooms. Sauté for about 5 minutes until browned.
  4. Make the sauce: Reduce heat to medium, add chopped onion, and sauté until translucent. Sprinkle in flour, stirring well for 1 minute.
  5. Add broth gradually while scraping the bottom of the pan. Bring to a simmer and cook for about 5 minutes until slightly thickened.
  6. Finish with sour cream: Remove from heat and stir in sour cream. Add beef strips back and toss to coat, warming through for an additional 2-3 minutes.
  7. Cook the noodles according to package instructions, drain and set aside.
  8. Combine and serve: Plate noodles and top with Beef Stroganoff sauce. Garnish with fresh parsley.

Notes

For a lighter version, you can substitute Greek yogurt for sour cream. This dish can also be made ahead and stored in the fridge for up to 3 days.
