Deliciously Zesty Beef Taco Soup

  • 1 can black beans, drained
  • 1 can kidney beans, drained

  • 1 can diced tomatoes

  • 23 minced garlic cloves
  • 2 tablespoons taco seasoning
  • 4 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat, add onion, and sauté until translucent. Add garlic and sauté for an additional minute.
  2. Brown the beef: Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Add the seasoning: Stir in taco seasoning, salt, and pepper, cooking for 1 minute until fragrant.
  4. Incorporate the veggies: Add black beans, kidney beans, corn, diced tomatoes, and broth. Stir to combine.
  5. Simmer and develop flavor: Bring to a gentle boil, then reduce heat and simmer for 20-30 minutes.
