Pineapple Coconut Dream Cake

A vibrant, flavorful cake bursting with the tropical flavors of pineapple and coconut.

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup butter (softened)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch round cake pan by greasing and flouring it.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract.
  5. Mix the flour, baking powder, shredded coconut, and salt in a separate bowl.
  6. Combine the dry mixture with the wet mixture, mixing until just combined.
  7. Fold in the crushed pineapple gently using a spatula.
  8. Pour the batter into the prepared cake pan.
  9. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve simply with powdered sugar or top with whipped cream for extra delight.
