Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup freshly brewed strong hot coffee
  • 1/2 cup salted butter (room temperature)
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 3 tablespoons milk or heavy cream
  • 1 cup salted butter (room temperature)
  • 1/2 teaspoon salt (for frosting)
  • 2 teaspoons vanilla extract (for frosting)
  • 3 1/2 cups powdered sugar (for frosting)
  • 1/2 cup cocoa powder (for frosting)
  • 4 tablespoons heavy cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them or lining with parchment paper.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Combine the wet ingredients: In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Combine the mixtures: Gradually pour the wet mixture into the dry ingredients, mixing until just combined.
  5. Brew your coffee. It should be hot and fresh.
  6. Mix in the hot coffee until combined.
  7. Transfer the batter evenly between the prepared cake pans.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool the cakes in the pans for 10-15 minutes before transferring to a wire rack to cool completely.
  10. Prepare the frosting by beating together the room temperature salted butter and creamy peanut butter until light and fluffy. Gradually mix in powdered sugar and milk until smooth.
  11. Frost the cooled cakes, first layering with frosting between the two layers, then covering the top and sides.
  12. Serve with optional decorations like crushed Reese’s cups or chocolate shavings.

Notes
