Chewy Banana Oatmeal Cookies

Delicious and wholesome cookies made with ripe bananas and oats, perfect for a delightful snack or dessert.

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a baking sheet lined with parchment paper or a silicone baking mat.
  3. Mash the ripe bananas in a bowl using a fork until smooth.
  4. Cream the softened butter and brown sugar together until creamy.
  5. Add the mashed bananas and vanilla, mixing until combined.
  6. Combine rolled oats, flour, baking soda, and salt in another bowl.
  7. Bring the dry ingredients into the wet mixture gradually and mix until well combined.
  8. Fold in chocolate chips if using.
  9. Scoop rounded tablespoonfuls of dough onto the baking sheet, leaving space in between.
  10. Bake for 10-12 minutes or until edges are golden brown.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies are perfect with a glass of milk or a warm cup of tea. Feel free to experiment with different add-ins like nuts or dried fruit.
