Chicken Pot Pie Bake

A cozy and comforting chicken pot pie bake filled with tender chicken, mixed vegetables, and topped with fluffy biscuit dough.

Ingredients

  • 2 cups Boneless, skinless chicken breasts or thighs
  • 2 cups Mixed vegetables (carrots, peas, corn)
  • 1 can Cream of chicken soup or homemade cream sauce
  • 1 package Biscuit dough (store-bought or homemade)
  • 1 teaspoon Fresh or dried thyme
  • 1 teaspoon Fresh or dried parsley
  • Salt and pepper to taste
  • Olive oil (as needed)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chicken in a large skillet over medium heat until golden brown, about 6-8 minutes per side.
  3. Shred the cooked chicken using two forks or chop into bite-sized pieces.
  4. Sauté mixed vegetables in the skillet until fork-tender, about 3-5 minutes.
  5. Prepare the cream sauce by whisking together soup or homemade sauce until smooth.
  6. Combine shredded chicken, sautéed vegetables, and cream sauce in a large mixing bowl.
  7. Transfer the mixture into a greased 9×13-inch baking dish.
  8. Top with pieces of biscuit dough.
  9. Bake for 25-30 minutes or until biscuits are golden brown and filling is bubbly.
  10. Cool for 5-10 minutes before serving.

Notes

You can assemble the filling in advance and refrigerate it before baking.
