Cinnamon Coffee Cake Muffins

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin with paper liners or grease it with butter.
  3. Mix dry ingredients: whisk together flour, sugar, baking powder, salt, and cinnamon.
  4. Cream butter until creamy, then gradually add brown sugar.
  5. Combine eggs and vanilla with the butter-sugar mixture until smooth.
  6. Blend dry ingredients into the wet mixture, alternating with milk.
  7. Fill each muffin cup about 3/4 full with batter.
  8. Create the streusel topping by combining cinnamon, brown sugar, and flour, then sprinkle over the batter.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Cool the muffins in the tin for a few minutes before transferring to a wire rack.

Notes

Serve warm or let cool completely for later. Muffins can be frozen for up to 3 months.
