  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 Tbsp homemade blend)
  • 2/3 cup water
  • 8 small (6-inch) flour tortillas (or corn tortillas, lightly fried)
  • 1 can (15 oz) refried beans
  • 1/4 cup water (to thin beans slightly)
  • 1 cup red enchilada sauce (or mild taco sauce)
  • 2 cups shredded Mexican blend cheese (or cheddar/Monterey jack)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives (optional)
  • Oil for frying (or cooking spray if baking)

Instructions

  1. Prepare the Meat Filling: Heat a non-stick skillet over medium heat. Add your ground beef (or turkey/chicken) and cook until browned, about 5-7 minutes. Drain excess fat if necessary. Stir in taco seasoning and water; let simmer for 3-5 minutes.
  2. Prep the Tortillas: If frying, heat oil in a separate pan and fry each tortilla for about 30 seconds on each side until golden and crunchy. For baking, lightly spray with oil and bake at 400°F (200°C) for 5-10 minutes.
  3. Assemble the Pizza: Spread a layer of refried beans on a crispy tortilla. Spoon the seasoned meat filling on top, followed by enchilada sauce and cheese. Repeat with another tortilla and layer the toppings.
  4. Cook the Pizza: Transfer the assembled pizzas to the skillet and cook on medium heat for about 5-7 minutes, covered, until cheese melts. For baking, place in the oven at 400°F (200°C) for 10-15 minutes.
  5. Add the Toppings: Remove from heat and garnish with diced tomatoes, green onions, and black olives. Serve with sour cream or guacamole.

Notes

You can easily modify the recipe to be vegetarian or to add a spicy kick with jalapeños. Make sure tortillas are crispy before adding toppings to avoid sogginess.
