Cozy Corn Chowder

A warm and comforting corn chowder packed with flavors of sweet corn, tender potatoes, and crispy bacon.

Ingredients

  • Fresh Corn (4 cups)
  • Potatoes (2 medium, diced)
  • Bacon (4 strips, chopped)
  • Heavy Cream (1 cup)
  • Onion (1 medium, diced)
  • Garlic (2-3 cloves, minced)
  • Chicken or Vegetable Broth (4 cups)
  • Seasonings (Salt, Pepper, Thyme, and Bay Leaf)

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy, about 5–7 minutes.
  2. Sauté the onion and garlic in the pot for 3–4 minutes until translucent.
  3. Add the diced potatoes and cook for 2 minutes.
  4. Pour in the chicken or vegetable broth, adding thyme and bay leaf, and let simmer for 15 minutes.
  5. Incorporate the corn and cook for another 5–7 minutes.
  6. Blend a portion of the chowder if a creamier texture is desired.
  7. Finish by stirring in the heavy cream and reserved bacon fat, simmering for another 5 minutes.
  8. Serve into warm bowls and enjoy!

Notes

Add a pinch of cayenne for a spicy kick or make it creamy and vegan by substituting heavy cream with coconut milk!
