Creamy Carrot Ginger Soup

A vibrant, creamy soup that combines the sweet taste of carrots with the warm kick of ginger, perfect for chilly days.

  • 1.5 pounds carrots, peeled and chopped
  • 1 thumb-sized piece of fresh ginger, sliced thinly
  • 2 tablespoons olive oil or butter
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Prep your ingredients: Start by peeling and chopping the carrots. Peel and slice the ginger.
  2. Sautéing: In a large pot, heat the olive oil or butter over medium heat. Add the ginger and sauté for about 2 minutes.
  3. Add the chopped carrots and season with salt and pepper. Stir for another 5 minutes.
  4. Pour in the vegetable broth, bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Blend the soup using an immersion blender until smooth and creamy.
  6. Add the heavy cream and warm through for 5 minutes. Adjust seasoning as needed.
  7. Serve in bowls, garnishing with fresh herbs or a drizzle of olive oil.

Notes

This soup can be customized with spices or additional vegetables. It freezes well for up to three months.
