Creamy Corn Chowder

A comforting, creamy corn chowder that warms your belly and fills your heart with nostalgia, perfect for chilly days.

  • 2 cups corn (fresh, frozen, or canned)
  • 2 medium Yukon Gold or russet potatoes, diced
  • 4 slices of bacon (or turkey bacon)
  • 1 cup heavy cream (or half-and-half)
  • 4 cups vegetable or chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon dried thyme (or your favorite herbs)

Instructions

  1. Prep your ingredients: Gather and chop all ingredients.
  2. Sauté the bacon in a large pot over medium heat until crispy (about 5-7 minutes).
  3. Add onions to the pot and sauté for 3-4 minutes until translucent, then stir in minced garlic for 1 additional minute.
  4. Stir in the diced potatoes and sauté for 2-3 minutes.
  5. Pour in the broth and corn; bring to a boil, then simmer for 10-15 minutes until potatoes are tender.
  6. Add cream to the pot and lower the heat, stirring until well mixed.
  7. Season with salt, pepper, and thyme to taste.
  8. Blend (optional): Use an immersion blender for a smoother texture without fully puréeing.
  9. Serve hot, garnished with bacon bits and fresh herbs if desired.

Notes

For a vegetarian version, omit the bacon and use vegetable broth. Experiment with different herbs and spices to suit your taste!
