Creamy Hungarian Mushroom Soup

A rich and comforting mushroom soup that brings warmth and nostalgia to your table.

  • 3 tablespoons olive oil
  • 1 ½ pounds mixed mushrooms (trimmed and sliced ¼-inch thick)
  • 2 cups diced yellow onions
  • 3 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 4 teaspoons sweet mild paprika
  • 1 tablespoon chopped fresh dill, or 2 teaspoons dried dill
  • Kosher salt and cracked black pepper to taste
  • ½ cup dry white wine (such as Sauvignon Blanc)
  • 3 cups low-sodium chicken broth or vegetable broth
  • 2 tablespoons low-sodium soy sauce
  • 1 ½ cups whole milk
  • ¾ cup sour cream
  • 2 tablespoons white wine vinegar or sherry vinegar
  • ½ cup chopped fresh parsley

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Sauté the diced onions with a pinch of salt until translucent (about 5-7 minutes), then add the sliced mushrooms and cook until browned (10-15 minutes).
  3. Incorporate the butter until melted, then stir in the flour and cook for about 2 minutes.
  4. Add the paprika and dill, stirring for about 30 seconds.
  5. Pour in the dry white wine and deglaze the pot, simmering for 2-3 minutes.
  6. Stir in the broth and soy sauce, bringing it to a boil before reducing heat and simmering for about 15 minutes.
  7. Add the milk and sour cream, whisking until combined.
  8. Finish by stirring in the vinegar and seasoning to taste.
  9. Garnish with fresh parsley before serving.

Notes

For a vegan version, substitute whole milk with coconut milk and sour cream with cashew cream. Add a sprinkle of cayenne for a spicy twist!
