Creamy Jalapeño Popper Soup

A comforting soup combining the spicy kick of jalapeños, creamy richness of cream cheese, and smoky flavor of bacon.

  • 2 cups Cooked Chicken (or shredded tofu for vegetarian)
  • 45 Fresh Jalapeños
  • 8 oz Cream Cheese
  • 4 strips of Bacon
  • 1 medium Onion
  • 3 cloves Garlic
  • 4 cups Chicken Broth (or vegetable broth for vegetarian)
  • 1 tsp Cumin
  • Salt and Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Dice your onion and mince the garlic. In a large pot over medium heat, cook the bacon until it’s crispy. Once done, remove it and set it aside, leaving the bacon fat in the pot. Now, add your diced onion to the pot, and sauté for about 3-4 minutes until softened. Next, stir in the minced garlic for another minute.
  2. Dice your jalapeños. If you’re adjusting the spice level, now’s the time to remove the seeds! Throw them into the pot and sauté them with the onions and garlic for an additional 2-3 minutes until they’re just tender.
  3. Add your cooked chicken, chicken broth, cumin, and season with salt and pepper. Stir everything together and bring it to a gentle simmer.
  4. Once your soup is simmering, it’s time to add the cream cheese. Cut it into chunks for easier melting. Stir until the cream cheese is fully incorporated into the soup, creating a creamy consistency.
  5. Chop up the crispy bacon and fold it back into the soup, stirring it in gently. Give it a taste—adjust seasoning as desired, and garnish with fresh cilantro right before serving.

Notes

This soup can be frozen and reheated, and leftovers last up to 4 days in the fridge. Adjust spice levels and experiment with other toppings.
