Creamy Mushroom Soup

A rich and velvety soup that brings comfort and warmth with every spoonful, perfect for cozy evenings.

Ingredients

  • 8 oz Mushrooms (button, cremini, or shiitake)
  • 1 medium Onion (sweet or yellow)
  • 1 cup Heavy Cream (or half-and-half/coconut cream)
  • 1 teaspoon Fresh Thyme (or dried thyme)
  • Vegetable broth (about 4 cups)
  • 2 tablespoons Olive Oil
  • Butter (for sautéing)
  • Salt and Pepper (to taste)

Instructions

  1. Prep your ingredients: Rinse and slice mushrooms, and dice the onion.
  2. Sauté the aromatics: In a large pot, heat olive oil and butter, then add onions and cook until translucent.
  3. Cook the mushrooms: Add sliced mushrooms and salt, cooking until browned.
  4. Add thyme and broth: Stir in thyme and pour in vegetable broth.
  5. Simmer and blend: Bring to a simmer for 15 minutes then blend to your desired texture.
  6. Stir in cream: Return soup to heat and add heavy cream.
  7. Garnish and serve: Serve with fresh herbs and a side of bread or crackers.
