Creamy Mushroom Soup

A comforting bowl of creamy mushroom soup, rich and velvety with earthy flavors.

Ingredients

  • 500g fresh mushrooms (cremini or shiitake)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme (or 2 tsp fresh)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until soft and translucent. Then, toss in the minced garlic and dried thyme, and cook for another minute.
  2. Cook the mushrooms: Add the sliced mushrooms to the pot. Stir well to coat with the oil and mix with the aromatics. Continue to cook for about 8-10 minutes.
  3. Pour in the broth: Once the mushrooms are looking fabulous, pour in the broth. Scrape up any brown bits and bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
  4. Blend for creaminess: Use an immersion blender to blend the soup until smooth or transfer to a blender in batches for a smoother consistency.
  5. Stir in the cream: Return the blended soup to the pot (if applicable), and stir in the heavy cream. Season with salt and pepper to taste. Let it simmer for another 5 minutes.
  6. Serve and enjoy: Spoon your creamy mushroom soup into bowls, garnish with fresh thyme or olive oil, and enjoy the cozy vibes!

Notes

For a vegan option, substitute the heavy cream with coconut cream and use vegetable broth. Keep the soup in the fridge for 3-4 days and add cream just before serving for best consistency.
