  • 4 cups marinara sauce
  • 1 cup freshly grated Parmesan cheese
  • 2 cups small pasta (like ditalini or orzo)
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: Dicing it into bite-sized pieces and season with salt and pepper.
  2. Sauté the chicken: In a large pot, heat olive oil over medium-high heat. Add chicken and cook until golden brown, about 5-7 minutes.
  3. Add the marinara sauce and chicken broth: Stir to combine, then bring to a gentle simmer.
  4. Incorporate the pasta: Add uncooked pasta and simmer for about 10-12 minutes, or until cooked al dente.
  5. Add the final touches: Stir in oregano and half of the Parmesan cheese until melted.

Notes

For a vegetarian version, substitute chicken with diced zucchini or chickpeas, and use vegetable broth.
