Loaded Taco Potato Soup

A cozy fusion of taco flavors and hearty potato soup, perfect for cold days.

  • 1 lb Ground Beef
  • 3 large Potatoes (russet or Yukon gold)
  • 2 tbsp Taco Seasoning
  • 4 cups Vegetable Broth
  • 1 cup Cheddar Cheese
  • ½ cup Sour Cream or Greek Yogurt
  • Fresh Cilantro for garnish
  • Diced Tomatoes, Avocado, and Crushed Tortilla Chips for toppings

Instructions

  1. Brown the Beef: In a large pot over medium-high heat, add the ground beef. Cook until no longer pink, about 5-7 minutes.
  2. Add Potatoes: Dice the potatoes and toss them in after draining excess fat from the beef, stirring for 2-3 minutes.
  3. Season it Up: Sprinkle in taco seasoning and stir to coat beef and potatoes.
  4. Pour in Broth: Add vegetable broth to cover potatoes and bring to a boil, then simmer for 15-20 minutes.
  5. Stir in Cheddar: When potatoes are tender, stir in cheddar cheese until melted.
  6. Serve: Ladle into bowls and top with sour cream, cilantro, and any additional toppings.
