Extra-Crispy Oven-Baked Salmon with Herb Crust

A delicious and healthy oven-baked salmon with a crispy herb crust, perfect for impressing your guests without the fuss.

  • 4 salmon fillets (about 6 oz each)
  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh dill, finely chopped
  • 3 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon lemon zest (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet with parchment paper or aluminum foil.
  3. Make the herb crust by mixing panko breadcrumbs, parsley, dill, garlic, Parmesan cheese, and lemon zest in a bowl. Drizzle with olive oil and season with salt and pepper.
  4. Pat the salmon fillets dry and place them skin-side down on the baking sheet. Drizzle with olive oil and season with salt and pepper.
  5. Crust the salmon by pressing the herb mixture onto the top of each fillet.
  6. Bake for about 12-15 minutes, until the crust is golden brown and the salmon flakes easily with a fork.
  7. Serve the salmon alongside your favorite sides.
