Peanut Butter Muffins

Deliciously nutty peanut butter muffins that are light, fluffy, and perfect for any time of day.

  • 1 cup peanut butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup flour
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin with paper liners or non-stick spray.
  3. Mix the peanut butter and sugar in a large bowl until creamy and smooth.
  4. Add the eggs and vanilla, beating until light and fluffy.
  5. Combine the flour, baking soda, and salt in a separate bowl.
  6. Bring the dry mixture into the wet batter gradually, stirring gently.
  7. Fold in the chocolate chips.
  8. Scoop the batter into the muffin cups, filling about 2/3 full.
  9. Bake for 15-18 minutes or until a toothpick comes out clean.
  10. Cool for 5 minutes before transferring to a wire rack.

Notes

For variations, try adding bananas, oats, or nuts. Store in an airtight container for up to 3 days.
