Egg Roll Bowls with Chicken and Cabbage

A flavorful twist on classic egg rolls, this dish combines ground chicken, cabbage, and a savory mix of spices for a quick and satisfying meal.

  • 1 pound ground chicken
  • 2 cups shredded cabbage
  • 1 cup carrots, shredded
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste
  • Cooked rice or quinoa, for serving
  • Sesame seeds, for garnish

Instructions

  1. Heat a large skillet over medium heat. Add 1 tablespoon of sesame oil. When hot, add the ground chicken.
  2. Cook the ground chicken for 5–7 minutes, or until fully cooked. Season with salt and pepper.
  3. Add minced garlic and ginger. Sauté for 1–2 minutes until fragrant.
  4. Incorporate shredded cabbage and carrots, cooking for 5 minutes, until cabbage is tender but crunchy.
  5. Pour in the soy sauce and cook for another 2–3 minutes.
  6. Finish by tossing in chopped green onions and stir to combine.

Notes

You can meal prep this dish ahead of time and store in the fridge for easy reheating. Feel free to customize the recipe by adding more veggies or changing the protein.
