Homemade English Muffins

  • 2 tsp active dry yeast
  • 1 cup whole milk (warm, 105115 degrees)
  • 1/2 cup water (warm, 105115 degrees)
  • 2 tbsp shortening (melted)
  • 2 tbsp butter (melted)
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 tbsp cornmeal

Instructions

  1. Activate the yeast: In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 5 to 10 minutes until it becomes frothy.
  2. Mix the wet ingredients: In a large mixing bowl, combine the warm milk, melted shortening, and melted butter. Add the frothy yeast mixture and stir gently.
  3. Combine the dry ingredients: In another bowl, whisk together the flour and salt.
  4. Create the dough: Gradually add the dry ingredients to the wet mixture, stirring until a shaggy dough forms.
  5. Knead the dough: Transfer the dough to a floured surface and knead for about 8 to 10 minutes until smooth and elastic.
  6. First rise: Place the kneaded dough in a greased bowl, cover with a towel, and let it rise for about an hour until doubled in size.
  7. Shape the muffins: Roll out the dough to about 1-inch thickness and use a cutter to cut out muffins.
  8. Second rise: Place the rounds on a cornmeal-dusted baking sheet, cover lightly, and let them rise again for about 30 minutes.
  9. Cook the muffins: Preheat a griddle over medium heat and cook the muffins for about 7 minutes on each side until golden brown.
  10. Cool and enjoy: Transfer the muffins to a wire rack to cool before slicing and serving.

Notes

These muffins can be frozen and toasted later. Keep the heat low when cooking to ensure they cook through properly without burning.
