Apple Cider Cheesecake

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup reduced fresh apple cider
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust by combining the graham cracker crumbs, 1/3 cup sugar, and melted butter.
  3. Press the crust into a springform pan, spreading evenly and baking for about 10 minutes.
  4. Make the filling by beating the softened cream cheese until creamy and smooth.
  5. Add the eggs, one at a time, mixing on low speed.
  6. Incorporate the vanilla, apple cider, cinnamon, and nutmeg until well combined.
  7. Pour the cheesecake filling over the crust.
  8. Bake the cheesecake for about 50-60 minutes or until edges are set.
  9. Cool down for about an hour before refrigerating for at least 4 hours.
