Double Chocolate Cupcakes

  • 1/4 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. Mix the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a bowl.
  3. Combine the melted butter, eggs, vanilla extract, and buttermilk in another bowl until smooth.
  4. Blend the wet mixture into the dry ingredients until just combined.
  5. Stir in the chocolate chips until evenly distributed.
  6. Fill each cupcake liner about two-thirds full.
  7. Bake for 18–20 minutes or until a toothpick comes out clean.
  8. Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack.
  9. Frost with your favorite chocolate frosting or dust with powdered sugar.

Notes

For a unique twist, try adding mint extract or folding in some nuts!
