Greek Chicken Gyros with Lemon-Herb Marinade and Tzatziki

A delicious and vibrant recipe for Greek Chicken Gyros, featuring marinated chicken thighs and creamy tzatziki.

  • 1.5 lbs boneless, skinless chicken thighs
  • ¼ cup olive oil
  • Juice of 2 lemons
  • 4 cloves garlic (minced)
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 cup Greek yogurt
  • ½ cucumber (grated and drained)
  • 2 cloves garlic (minced) for tzatziki
  • 1 tablespoon olive oil for tzatziki
  • 1 tablespoon fresh dill (chopped) or 1 teaspoon dried dill
  • Juice of ½ lemon for tzatziki

Instructions

  1. Create the Marinade: In a bowl, combine the olive oil, juice of 2 lemons, minced garlic, oregano, and paprika. Give it a good whisk until everything is well blended.
  2. Add the Chicken: Place the boneless, skinless chicken thighs into your marinade. Ensure each piece is well coated.
  3. Preheat the Grill or Skillet: While the chicken marinates, heat up your grill or a skillet over medium-high heat.
  4. Grill the Chicken: Once your grill is hot, add the marinated chicken. Cook for about 5–6 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. Let it Rest: Remove the chicken from the heat and let it rest for about 5 minutes.
  6. Make the Tzatziki: In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, chopped dill, and the juice of ½ lemon. Season with salt to taste.
  7. Mix Until Smooth: Stir all the ingredients until you have a creamy and smooth tzatziki.
  8. Slice the Chicken: Once your chicken has rested, slice it into strips.
  9. Build Your Gyro: Lay out the warm pita, fill it with sliced chicken, and top with tzatziki.
  10. Dig In: Wrap your gyro in foil or paper for easy eating on the go.

Notes

You can marinate the chicken a day ahead, and tzatziki can be made and stored in the fridge for up to 2-3 days.
