Ham & Bean Soup

A cozy, hearty ham and bean soup perfect for warming up on cold days.

  • 2 cups leftover cooked ham, diced
  • 2 cans white beans (Great Northern or Cannellini), drained and rinsed
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, diced
  • 4 cups low-sodium chicken or vegetable broth
  • 12 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Croutons and fresh parsley for garnish

Instructions

  1. Sauté the Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onions and sauté for about 5 minutes until translucent.
  2. Add the Celery and Carrots: Toss in chopped celery and carrots. Sauté for another 4-5 minutes until softened.
  3. Incorporate the Ham: Add diced ham and cook for about 2-3 minutes. If using a ham hock, put it in now.
  4. Pour in the Broth: Add 4 cups of broth to the pot.
  5. Add the Beans: Stir in the white beans.
  6. Season It Up: Add herbs, salt, and pepper to taste.
  7. Bring to a Simmer: Allow the mixture to come to a gentle simmer, then cook uncovered for 30-40 minutes.
  8. Final Touches: Check consistency and mash some beans for thickness. Adjust seasoning and remove bay leaves before serving.

Notes

Feel free to adapt the ingredients to your taste or dietary needs. This soup keeps well in the fridge for 4-5 days and can be frozen for 3-4 months.
