Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch round cake pan by greasing it and dusting it with flour.
  3. Mix the flour, baking powder, and salt in a medium bowl.
  4. Cream the butter and sugar together in a large bowl until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Incorporate the coconut milk until just combined.
  7. Combine the dry ingredients gradually into the wet mixture.
  8. Add the crushed pineapple and walnuts, folding them in gently.
  9. Pour the batter into your prepared pan and smooth the top.
  10. Bake for 30-35 minutes, or until a toothpick comes out clean.
  11. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
