Turkey Stuffed Acorn Squash

A delightful dish featuring acorn squash stuffed with a savory turkey filling, perfect for fall gatherings.

  • 1 Acorn Squash (or 2 smaller ones)
  • 1 lb Ground Turkey
  • 1/2 Yellow Onion, chopped
  • 1 Celery Stalk, chopped finely
  • 1/4 Cup Dried Cranberries
  • 1/2 Apple, peeled and chopped
  • 1/2 Teaspoon Dried Thyme
  • 1 Tablespoon Plain Breadcrumbs
  • 3 Tablespoons Parmesan Cheese, grated
  • 1/2 Cup Chicken Stock
  • 1/4 Teaspoon Garlic Salt
  • 3 Tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the acorn squash in half lengthwise, scoop out the seeds, drizzle with olive oil, and season with salt and pepper.
  3. Roast the squash halves, cut-side down, in the oven for about 30-35 minutes.
  4. Heat 1 tablespoon of olive oil in a skillet, add chopped onion and celery, and sauté for 4-5 minutes.
  5. Add the ground turkey, seasoning with salt, pepper, and garlic salt, and cook until browned.
  6. Stir in the dried cranberries and chopped apple.
  7. Mix in thyme, breadcrumbs, and Parmesan cheese, then pour in chicken stock and simmer for about 5 minutes.
  8. Fill the roasted squash with the turkey mixture.
  9. Return to the oven and bake for an additional 10-15 minutes.
