  • 2 teaspoons Baking Powder

  • 1 teaspoon Ground Cinnamon

  • 1 Large Egg
  • 0.5 cup Milk (or Dairy-Free Alternative)
  • 0.25 cup Vegetable Oil (or Melted Coconut Oil)
  • 1 teaspoon Vanilla Extract
  • 2 cups Peeled, Diced Apples
  • 1 cup Powdered Sugar
  • 24 tablespoons Milk (for Glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Combine the wet ingredients in another bowl: beat the egg, then add the milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. Fold in the diced apples into the batter.
  6. Fill each muffin slot about 2/3 full with the batter.
  7. Bake for 18 to 22 minutes or until a toothpick inserted comes out clean.
  8. Cool the muffins in the tin for about 5 minutes before transferring them to a wire rack.
  9. Whisk together powdered sugar and milk for the glaze.
  10. Drizzle the glaze over the muffins once cooled.

Notes

For a vegan option, substitute the egg with a flax egg and use a dairy-free milk alternative. Feel free to adjust the sugar according to taste.
