Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab a 9×5-inch loaf pan and grease it with butter or cooking spray.
  3. Cream the softened butter and granulated sugar together until pale and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Whisk together the flour, salt, and baking powder in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  7. Add the key lime juice and extract, folding gently to combine.
  8. Transfer the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes, or until a toothpick inserted comes out clean.
