Lasagna Soup

A delicious and hearty dish that combines all the comforting flavors of traditional lasagna in a cozy, soupy form.

Ingredients

  • 1 lb Ground Beef
  • 8 oz Lasagna Noodles
  • 28 oz Diced Tomatoes
  • 1 cup Tomato Sauce
  • 1 cup Ricotta Cheese
  • 1 cup Shredded Mozzarella Cheese
  • 1 Onion, diced
  • 2 Garlic Cloves, minced
  • 4 cups Water or Broth
  • Salt and Pepper to taste

Instructions

  1. Sauté the Ground Beef in a large pot or Dutch oven over medium-high heat until browned, about 5-7 minutes.
  2. Add the Aromatics by tossing in the diced onion and minced garlic. Stir in and let them soften for about 3-4 minutes.
  3. Mix in the Tomatoes by stirring in the diced tomatoes and tomato sauce, letting it simmer for about 5 minutes.
  4. Add Water and Noodles by pouring in the water or broth, bringing it to a boil, then adding the broken lasagna noodles to cook according to package directions (8-10 minutes).
  5. Stir in the Ricotta once the noodles are cooked, reducing the heat to low and blending well.
  6. Top with Mozzarella by ladling the soup into bowls and topping each with shredded mozzarella.

Notes

For a vegetarian option, substitute ground beef with sautéed mushrooms, zucchini, and spinach. You can also experiment with different herbs to enhance the flavor.
