Lemon Poppy Seed Zucchini Bread

  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon poppy seeds
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. Whisk together the vegetable oil and sugar in a large mixing bowl.
  4. Crack in the eggs one by one, beating them into the mixture, then add buttermilk and vanilla extract.
  5. Combine the all-purpose flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently.
  7. Fold in the grated zucchini, lemon zest, lemon juice, and poppy seeds.
  8. Pour the batter into a greased 9×5-inch loaf pan.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra boost of flavor, consider adding a sprinkle of salt to the wet ingredients.
