  • 2.5 cups ripe mangoes
  • 35 tbsp granulated sugar
  • 0.5 tbsp corn starch
  • 2 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.75 cups cold unsalted butter
  • 2/3 cups brown sugar
  • 1 large egg
  • 0.5 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 square baking pan with parchment paper.
  3. Combine chopped ripe mangoes, 3 tablespoons of granulated sugar, and corn starch in a mixing bowl.
  4. Whisk together all-purpose flour, baking powder, and salt in a large bowl.
  5. Cream cold unsalted butter and brown sugar until light and fluffy.
  6. Add the egg and vanilla extract, mixing until combined.
  7. Stir the flour mixture into the wet ingredients until crumbly and just combined.
  8. Press two-thirds of the crumb mixture into the prepared baking pan to form a crust.
  9. Pour your mango mixture over the crust, then sprinkle the remaining crumb mixture on top.
  10. Bake for 30-35 minutes or until the top is golden brown and the filling is bubbly.
  11. Cool in the pan for at least 10 minutes before using the parchment overhang to lift them out.
  12. Let cool completely before slicing.

Notes

For a sweet twist, dust with powdered sugar before serving. Pair with vanilla ice cream for an extra treat!
