Apple Walnut Chicken Salad

  • 2 cups Cooked Chicken, shredded or cubed
  • 1 to 2 medium Apples, chopped (Granny Smith preferred)
  • 1/2 cup Walnuts, roughly chopped
  • 1 cup Celery, finely chopped
  • 1/2 cup Mayo (adjust to preference)
  • 12 tablespoons Lemon Juice

Instructions

  1. Prep the Chicken: If using leftover chicken, shred or cube it. If not, cook chicken until completely done, about 20-30 minutes. Let cool.
  2. Chop Those Apples and Celery: While chicken cools, chop apples and celery into uniform pieces.
  3. Toast the Walnuts: Place walnuts in a dry skillet over medium heat and toast for about 5-7 minutes, stirring frequently.
  4. Mix it Up: In a large bowl, combine chicken, apples, celery, and walnuts.
  5. Dress It: Add mayonnaise and lemon juice; mix until coated. Adjust seasoning if needed.
  6. Chill: Let salad chill in the fridge for at least 30 minutes before serving.
