  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

  • 1/4 cup unsalted butter, cold and diced
  • 1/2 cup milk
  • 1 egg
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (for glaze)
  • 1/4 teaspoon ground cinnamon (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mash the bananas in a large mixing bowl until smooth.
  3. Whisk together the flour, sugar, baking powder, salt, and ground cinnamon in another bowl.
  4. Add the diced cold butter to the flour mixture, cutting it in until it resembles coarse crumbs.
  5. Combine milk, egg, and mashed bananas in a separate bowl and whisk until blended.
  6. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  7. Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick.
  8. Cut the dough into triangles and place them on a parchment-lined baking sheet.
  9. Bake for 15-20 minutes or until golden brown.
  10. Prepare the glaze by mixing cream cheese, powdered sugar, vanilla, milk, and ground cinnamon until smooth.
  11. Cool the scones on a wire rack for 10 minutes before drizzling with glaze.
