Beef & Mushroom Pie

A classic comfort food dish of tender beef and mushrooms encased in a flaky puff pastry, perfect for family gatherings.

Ingredients

  • 2 lbs beef (chuck roast or stew meat)
  • 8 oz mushrooms (cremini or button)
  • 1 large onion
  • 4 cloves garlic
  • 2 medium carrots
  • 1 cup beef broth
  • 1 cup red wine
  • 2 sheets puff pastry
  • 2 tbsp olive oil
  • herbs (thyme and rosemary)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté the onion and garlic in olive oil until fragrant.
  3. Add the carrots and mushrooms, cooking until reduced and caramelized.
  4. Brown the beef in batches and season with salt and pepper.
  5. Deglaze the pan with red wine, scraping up the brown bits.
  6. Pour in the beef broth and add herbs, bringing to a boil before simmering.
  7. Thicken the filling if necessary, using a cornstarch slurry.
  8. Prepare the puff pastry sheets and spoon the filling into a pie dish.
  9. Top with puff pastry, sealing the edges, and cut slits in the top.
  10. Brush with egg wash for a golden finish.
  11. Bake for 25-30 minutes or until golden brown.

Notes

Serve with steamed veggies or a fresh salad. Leftovers can be stored in the fridge for up to three days.
