The Best Blueberry Muffins

  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Optional: coarse sugar for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and line muffin tin with paper liners.
  2. Mix the dry ingredients: In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Combine the wet ingredients: In another bowl, whisk melted butter, milk, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until just combined.
  5. Add the blueberries and fold them in gently.
  6. Fill the muffin tins about two-thirds full and sprinkle with coarse sugar if desired.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Cool the muffins for a few minutes before transferring to a wire rack.
