Creamy Chicken Soup

A comforting and creamy chicken soup, perfect for chilly evenings and nourishing to the soul.

  • 2 lbs Chicken (boneless, skinless thighs or breasts)
  • 2 cups Vegetables (carrots, celery, onion)
  • 3 cloves Garlic (minced)
  • 6 cups Chicken Broth (or stock)
  • 1 cup Heavy Cream
  • 2 tsp Herbs (thyme, rosemary, bay leaf)
  • Salt and Pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onions, and let them soften for about 3-4 minutes.
  2. Add garlic and vegetables: Toss in the minced garlic along with diced carrots and celery. Cook for another 5 minutes, stirring occasionally.
  3. Incorporate the chicken: Nestle the chicken into the pot, pouring in your chicken broth to cover the ingredients by an inch, and bring it all to a boil. Reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
  4. Create creaminess: Once the chicken is cooked, remove it from the pot and add your heavy cream to the soup.
  5. Shred and return the chicken: Once cool enough to handle, shred the chicken and return it to the pot. Season the soup with herbs, salt, and pepper to taste, and simmer for an additional 5 minutes.
  6. Final touches: If using any optional add-ins like spinach or peas, throw them in for the last couple of minutes until just wilted.
