  • 2 tablespoons Olive Oil
  • 1 medium Onion (Finely chopped.)
  • 2 cloves Garlic (Minced.)
  • 250 grams Mushrooms (Cremini or Button.)
  • 1 cup Heavy Cream
  • 100 grams Parmesan Cheese
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon Thyme (Dried or Fresh)
  • 1 tablespoon Fresh Parsley (Chopped.)

Instructions

  1. Boil the Pasta: Start by bringing a large pot of salted water to a rolling boil. Toss in your pasta and cook it according to package instructions until al dente. Reserve about a cup of pasta water and drain the rest.
  2. Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent—about 3-4 minutes. Stir in the minced garlic, cooking just until fragrant, about 30 seconds.
  3. Cook the Mushrooms: Add the mushrooms to the skillet, stirring until they’re golden brown and have released their moisture (around 5-7 minutes).
  4. Whip up the Cream Sauce: Lower the heat slightly and pour in the heavy cream. Stir well and allow it to gently bubble. Add the thyme, salt, and pepper.
  5. Combine and Serve: Toss your cooked pasta right into the skillet, stirring in the grated Parmesan cheese gradually until it melts and merges with the sauce.
  6. Plate It Up: Plate your creamy mushroom pasta and sprinkle the reserved Parmesan and fresh parsley on top.
