The Best Gochujang Pasta

A spicy fusion of Italian and Korean cuisine, featuring creamy pasta with a bold gochujang sauce.

  • 1 lb (250g) pasta of your choice
  • 1/2 cup pasta water
  • 1 tsp olive oil (plus more for coating the pasta)
  • 2 tbsp butter
  • 46 garlic cloves, minced
  • 2 tbsp gochujang
  • 1 cup heavy cream
  • 1/4 tsp salt
  • 1/4 tsp smoked paprika
  • 1/4 cup freshly grated parmesan, and more for serving
  • Freshly cracked black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Once it’s bubbling, add your pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. In a large skillet over medium heat, add the olive oil and butter. Let them melt and combine.
  3. Toss in the minced garlic and sauté for about 1-2 minutes until fragrant.
  4. Stir in the gochujang and salt, allowing the paste to slightly char.
  5. Slowly pour in the heavy cream while stirring constantly to create a fabulous sauce.
  6. Add the drained pasta to the skillet, then pour in about 1/4 cup of the reserved pasta water, tossing to coat.
  7. Stir in the parmesan cheese and smoked paprika, and season with black pepper to taste.
  8. Divide the pasta among your plates, garnishing with additional parmesan and a drizzle of olive oil.

Notes

Feel free to customize with vegetables or proteins as desired. This dish can be made ahead and reheated with added cream or water.
