Greek Pork Tenderloin

A flavorful Mediterranean dish featuring tender pork marinated in olive oil, garlic, and zesty herbs.

  • 1 1/2 pounds pork tenderloin
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 3 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Make the marinade by mixing together olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and black pepper.
  3. Prepare the pork tenderloin by trimming any silverskin.
  4. Marinate the pork by pouring the marinade over it and letting it sit in the fridge for at least 30 minutes.
  5. Sear the pork in a hot skillet with olive oil for about 2-3 minutes on each side until golden brown.
  6. Roast the pork in the oven for 20-25 minutes until the internal temperature reaches 145°F (63°C).
  7. Rest the pork for about 10-15 minutes before slicing.
  8. Slice and serve the pork tenderloin, drizzling remaining juices over the top.

Notes

For best results, allow the pork to marinate overnight. Serve with Greek salad or tzatziki sauce.
