Turkey Meatball Soup

  • 1 cup Breadcrumbs
  • 1 Egg
  • 3 cloves Garlic, minced
  • 1 medium Onion, diced
  • 1/4 cup Parsley, finely chopped
  • 4 cups Stock/Broth (chicken or vegetable)
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Zucchini, chopped
  • 1 can (14.5 oz) Tomatoes (diced)
  • Salt and Pepper, to taste
  • Italian Herbs, to taste

Instructions

  1. Mix the Meatballs: In a large mixing bowl, combine the ground turkey, breadcrumbs, egg, minced garlic, diced onion, parsley, salt, and pepper. Use your clean hands to mix until everything is evenly combined.
  2. Form the Meatballs: Shape the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  3. Brown the Meatballs: Heat olive oil in a large pot over medium-high heat. Add the meatballs in batches, browning for about 3-4 minutes on each side.
  4. Sauté the Vegetables: Remove meatballs and add chopped carrots, celery, and zucchini to the same pot. Sauté for about 5-7 minutes.
  5. Build the Soup: Pour in the broth and add the diced tomatoes. Bring to a gentle simmer and return the browned meatballs to the pot.
  6. Simmer Away: Let the soup simmer gently for about 20-25 minutes until meatballs are cooked through.
  7. Taste and Adjust: Check seasoning and add more salt, pepper, or lemon juice as necessary.
