A heartwarming Italian Wedding Soup with tender turkey meatballs, vibrant greens, and cozy pasta in a rich broth.

  • 1 lb ground turkey
  • 1 cup breadcrumbs
  • 2 cloves minced garlic
  • 1/4 cup chopped parsley
  • Salt and pepper, to taste
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, diced
  • 46 cups broth (chicken or vegetable)
  • 1 cup small pasta (acini di pepe or orzo)
  • 4 cups fresh spinach
  • Parmesan cheese, for serving

Instructions

  1. Prepare the Meatballs: In a mixing bowl, combine ground turkey, breadcrumbs, minced garlic, chopped parsley, and a pinch of salt and pepper. Mix well and roll into bite-sized balls.
  2. Sauté Aromatics: In a large pot, heat olive oil. Add minced garlic and diced onions, cooking until softened.
  3. Add Vegetables: Stir in the diced carrots and celery and let cook for another 5 minutes.
  4. Brown the Meatballs: Gently place meatballs in the pot and brown them slightly.
  5. Pour in the Broth: Add chicken or vegetable broth and bring to a gentle boil. Reduce heat to simmer, seasoning to taste.
  6. Incorporate Pasta: After 10 minutes of simmering, add pasta and stir occasionally.
  7. Add Spinach: Once the pasta is nearly cooked, stir in fresh spinach.
  8. Finish with Cheese: Before serving, sprinkle in grated Parmesan cheese.
  9. Serve and Enjoy: Ladle the soup into bowls and garnish with additional cheese.

Notes

For gluten-free, use gluten-free pasta or zucchini noodles. Leftovers are even better the next day, but cook pasta separately if storing.
