Mango Coconut Chia Pudding

A refreshing and nutritious chia pudding combined with sweet mango and rich coconut milk, perfect for breakfast or a light dessert.

  • 1/4 cup chia seeds
  • 1 cup full-fat canned coconut milk
  • 2 tsp agave (to taste)
  • Pinch of salt
  • 1/4 cup coconut water or filtered water (optional, for thinning)
  • 1 1/2 cups fresh chopped mango
  • 1 1/2 tsp agave (for layering and serving)

Instructions

  1. Prepare the chia mixture by combining chia seeds, coconut milk, 2 teaspoons of agave, and a pinch of salt in a mixing bowl.
  2. Let it rest for about 5-10 minutes to allow the chia seeds to hydrate and thicken.
  3. Final whisk the mixture to ensure it’s well combined and thickened to your preference.
  4. Chill the mixture in the refrigerator for at least 15-30 minutes.
  5. Chop the fresh mango into small cubes while the pudding cools.
  6. Assemble the pudding with layers of chia pudding and mango in a serving bowl or jar.
  7. Drizzle agave on top for added sweetness before serving.

Notes

Experiment with different fruits and toppings for variety. This pudding can be prepared up to 3 days in advance; just add fresh fruit before serving.
