Mediterranean Baked Salmon with Feta

  • 4 salmon fillets
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs (parsley, basil, or dill) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grab a baking dish and drizzle a tablespoon of olive oil on the bottom.
  3. Place the salmon fillets in the baking dish, skin-side down, and season with salt and pepper.
  4. Scatter the chopped sun-dried tomatoes over the salmon.
  5. Pile the spinach around the salmon and tomatoes.
  6. Crumble the feta cheese over the top.
  7. Drizzle the remaining olive oil over everything, and sprinkle with oregano and garlic powder.
  8. Cover the dish with aluminum foil and bake for 20-25 minutes.
  9. Remove the foil during the last 5 minutes of baking.
  10. Garnish with fresh herbs before serving.

Notes

You can prepare this dish ahead of time and refrigerate it until ready to bake. Adjust cooking time if chilled. The dish also freezes well.
