Light and Creamy Pink Fluff

  • 1 package (3 oz) strawberry gelatin powder
  • 1 cup boiling water
  • 1 cup cottage cheese
  • 1 cup nondairy dessert topping (like Cool Whip, thawed)
  • 1 can (8 oz) crushed pineapple, drained
  • 1 cup fresh strawberries, sliced
  • Optional: 1 cup mini marshmallows or 1/2 cup chopped nuts

Instructions

  1. Prepare the Gelatin: In a mixing bowl, combine the strawberry gelatin powder with the boiling water. Stir until fully dissolved, about 2 minutes.
  2. Chill the Mixture: Let it cool down for about 10-15 minutes.
  3. Mix in the Cottage Cheese: Fold in the cottage cheese gently to maintain a fluffy texture.
  4. Add the Whipped Topping: Fold in the thawed nondairy dessert topping until well incorporated.
  5. Incorporate the Pineapple and Strawberries: Fold in the drained crushed pineapple and fresh strawberries.
  6. Optionally Add Marshmallows and Nuts: Fold in mini marshmallows or nuts if using.
  7. Set it in the Fridge: Pour the mixture into a serving bowl, cover, and refrigerate for at least 2 hours.
  8. Serve and Enjoy: Serve in bowls and enjoy the smiles!
