Chicken Wild Rice Bowl

A vibrant and nourishing Chicken Wild Rice Bowl packed with tender chicken, earthy mushrooms, and wholesome wild rice topped with fresh spinach.

  • 1 pound Chicken Breast (or thighs)
  • 1 cup Wild Rice
  • 8 ounces Mushrooms (button or cremini)
  • 4 cups Fresh Spinach
  • 3 cups Chicken Broth (or vegetable broth)
  • 2 tablespoons Olive Oil
  • Salt and pepper to taste
  • Your favorite herbs (thyme, rosemary)

Instructions

  1. Cook the Wild Rice: Rinse the wild rice under cold water. In a medium pot, combine wild rice with chicken or vegetable broth. Bring to a boil, reduce heat to low, cover, and simmer for 40-50 minutes until tender.
  2. Prep the Chicken: Season chicken with salt, pepper, and herbs. Let it rest at room temperature for 15 minutes.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for about 5-7 minutes on each side until golden brown and fully cooked. Let it rest before slicing.
  4. Sauté the Mushrooms: In the same skillet, add more olive oil if needed and add sliced mushrooms. Sauté for 5-6 minutes until browned.
  5. Add the Spinach: Toss in spinach and stir until just wilted, about 1-2 minutes.
  6. Combine: Fluff the wild rice and stir it into the mushroom and spinach mixture. Slice the resting chicken and mix into the rice medley.

Notes

For extra flavor, consider drizzling some olive oil or squeezing lemon juice on top before serving. Garnish with fresh herbs.
