Cranberry Chicken

A deliciously tangy dish featuring juicy chicken thighs enveloped in a luscious cranberry sauce with a hint of rosemary.

  • 4 Chicken Thighs (Bone-in, Skin-on)
  • 1 cup Cranberry Sauce
  • 2 sprigs Fresh Rosemary
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • 1 cup Chicken Broth or Stock

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  3. Sear the chicken thighs skin-side down in a large oven-safe skillet for 5-7 minutes until golden brown.
  4. Add minced garlic and chopped rosemary, sautéing for about 30 seconds.
  5. Incorporate the cranberry sauce and chicken broth, stirring to combine.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes.
  7. Broil for the last 3-5 minutes for crispy skin.
  8. Rest the chicken for 5 minutes before serving.

Notes

Serve with mashed potatoes or roasted veggies, garnished with fresh rosemary.
